I DID fly there, and went because I was in a similar boat as the OP time-wise and am glad I did!

When I went through there was no simulator eval for interview... it sounds like that has changed. If they did send profiles to memorize, go off and memorize them. Fly them on MSFS in a king air or similar and practice them. If they had call outs, say call out as you fly the profile. Do some full procedure approaches, maybe the ILS to CYS for example, noting where you can get bitten on missed approach altitudes and the feeder to do the approach again, for example.
