Under 121 rules, even though you have the type rating when you come out of the sim, you aren't 'qualified' to fly for that carrier until the end of IOE.
Even if you come to carrier X with a full qualification from carrier Y, you still need to complete carrier X's qualification curriculum, including IOE.
I seem to remember a
whole lot of instruction going on during
my IOEs; newhire and upgrade. I hope my LCAs were logging instruction given.

Completely agreed- Time as an LCA giving OE is absolutely 100% dual given. That pilot is typed but not signed off in that seat.
The grayer area is giving line checks. I did a stint at DL as an FO that gave special airport qualifications. The CA wasn't qualified to operate into the airport... sometimes I was in the seat, sometimes I was in the jumpseat, but I was a required pilot. I ended up creating a separate column for that, as it wasn't true dual given (I wasn't the PIC), but I had to be there.
Perhaps a separate column for line checks, but you're shorting yourself if you're not logging LCA time giving OE as dual given.
