I'm not sure if you're adding a little sarcasm here with the Mother Teresa thing, so if that's the case, than I will apologize up front. But this is a difficult subject for a lot of folks on the outside looking in.
Many applicants are busy (cross-country commutes to reserve, military reserve duty, family commitments, etc) and think that what is done in the limited time at home outside of work doesn't constitute "volunteer work." I would encourage everyone with that mentality to think outside the box on this question when it comes up.
Do you help out with your kids' sports teams? Volunteer work. Do you participate in your kids' school (PTSO, fundraisers, etc)? Volunteer work. What about your church if that's your flavor? Volunteer work. Do you do stuff at your current job that is outside of the scope of your flight duties and what you get paid for (committees, etc.)? That's also volunteer work.
My point is, there is a lot of stuff that you probably already do that you would never think to take credit for. You do it because you care about it and because your family is involved in it or it makes a difference for your co-workers. That stuff counts. It's sometimes hard to quantify "volunteer work" because you don't think about the stuff that means something to you and the people that you do it for.
All they care about is that you make an effort to make a difference...somewhere. It might be very close to home for you, but you're still making a difference. If they hire you as a Delta Air Lines pilot, THAT makes an impression on them because people that you affect with your time will now associate YOU with THEM. That's what counts. So don't discount those "everyday things" that you do on your application. Put it in there, and let them sort it out.
That's my two cents on that....apologies if I misunderstood your point on that Galaxy Flyer.
