I guess I could go out and spend months and lots of money getting my CFI and CFI multi just so I can get the 18 or so more hours of multi I'll need. And then I'll have to find a school to instruct at that teaches multi. Either that or just rent a twin and split some safety pilot time.
I don't think you are able to log safety pilot time in a Multi unless you have a Multi CFI and a CFII.
