It sounds like a great opportunity........ to either put yourself on the fast-track to a job there or ensure you only fly on their airplanes if you buy a ticket.

Any info about expected attire? logbooks? resume, etc.?

Unless you have solid information to the contrary, I'd plan on treating it just like an interview. Do some interview prep with Emerald Coast or similar firm, wear your interview suit, have a resume and logbooks ready to offer. Be ready with any and all TMAAT stories, recount your flying history in about 5 minutes, be ready to sell yourself, know the company well and be able to discuss why you want to work there. I say be ready with all those options, but you're going to need to be flexible. It's a little difficult going into something like this since "gouge" on what to expect is obviously not as available as it might be for the formal interview process. You're going to have to take your cues from him and follow his lead, but be on the lookout for opportunities to show him why you should get the nod.

Since you know who you're meeting with beforehand, try to find out all you can about that CP. You may not want to offer much of the information you're able to find and sound like some kind of stalker - but it may keep you from putting your foot in your mouth or just give you some basic perspective on the person.

Finally, be able to show the guy that he isn't going to mind going off to fly a 3-4 day trip with you. Don't know if any of that helped but good luck.
