The simplest answer is: an airplane flies at a given altitude above the ground, so as the earth curves the altitude of the airplane curves with it. Otherwise, as the earth curved the airplane would be in a constant climb eventually going off into space. All airplanes are ultimately forced by the their design limits to follow the curve of the earth because they can only fly to/at a certain maximum altitude.
