Well, most of the time you don't need the foggles, but fairly often the sim visuals will break and default to good VFR. Then you're at risk of not completing your sim since you don't have a view limiting device.
Also make sure to bring one of those yoke-clip timers, in case the sim clock breaks (happens all the time). You'll need that to time your holds and also your non-precision approaches. I highly recommend timing your precision approaches as well, since the examiner may well fail the GS on you and you'll have to revert to the LOC only approach... And the MAP will be determined by timing.
Naturally you won't need a fuel tester until IOE. Just make sure you get one of those larger ones designed for jet fuel. On my first day I only had one of those little open-cup testers, and I spilled Jet-A everywhere :-0
