During the interview, they will ask you to write down your fleet preference if you have one, along with your availability date. How they determine who gets which is a mystery. But most of the people who specifically preferred the 767 did get it. I would say that if you want the 767, your chances of getting it are good.
The process that Dutch refers to above is no longer in use, except to the extent that the last 4 of your SSAN does determine your seniority once you're in class (0000 is highest seniority.)
