They both pay roughly $4000/month for First Officer and maybe $1000/month housing allowance. Upgrades at EVA are in seniority order and would be around 7 to 8 years, possibly longer. There was a report they had stopped hiring foreigners, but not sure. EVA has a pretty big bond that last 4 years.

China Airlines has a bond and lately has wanted a bank guarantee. That is a show stopper for most people.

To be honest they can be a good stepping stone to larger jets and better jobs if you can stick it out for a few years, but they certainly aren't a place you would want to stay long term. Too bad because Taiwan is a nice place to live.
