Skywest Online has my hire date as the day I accepted their offer. Is that our official DOH used for bidding or is it ground School grad date?

I can't speak for the CRJ. For the E175, nonrev benefits start for you on your first day of indoc, jumpseat privileges start after you pass ground school, your first day of Indoc is your official DOH for bidding.
I don't think there is a "flexible itinerary". You really can't miss ground school. If your timing of selling the airplane can't be flexible, then I suggest you wait until you sell your airplane before you start Indoc.
