Easy example: everyone bids Christmas off. Christmas is one of the peak flying times of the year, and they need more pilots than average. As a result, lots of (junior) pilots end up flying over or near Christmas even though they bid not to.
It’s called unstacking because in the grid view of pairings that need to be covered, there is a big vertical “stack” of trips over Christmas.
