spaghetti, beef jerky, trail mix, nuts, tuna, blah blah. The list goes on and on. Anything that reheats good is a good choice. Cook up some chicken and throw it in ziplock bags.
Also, to the coffee maker stories... You can cook ramen, soups, quesadillas (wash the bottom of the coffee maker first), oatmeal.. be creative!
I'm usually too lazy to pack stuff other than beef jerky and some peanuts or almonds. Take a thing of tuna for at the hotel. I usually just eat the food served on our longer flights, and then at restraunts / terminals.
