This is exactly what I did, and I've never had an issue at interviews (multiple 121, 135, and the FAA). I do bring my original paper logbook with me just in case they want to see it to verify the carryover entry in my printed electronic logbook, but I've never been asked for it.

One piece of advice I will give you based on the experience of a fellow interviewee - make sure when you print your electronic logbook that you SIGN every page. I use Log Ten, and their template includes a spot to sign, so that makes it easy. Someone I interviewed with once was sent out to the lobby to sign his pages, and needless to say it was an embarrassing moment for him.
