I don't know about the seals. I have smelled "dirty socks" on every pressurized plane I have flown. Sinse this issue gained visibility it has gotten much better/rarer, so MX is doing something right. The real answer to the problem is the system the 787 has, a separate electric compressor for cabin air.
As to why it only effected a few pilots? Because environmental toxins are like that. Not everyone exposed to "moderate" radiation develops cancer. Not everyone in Flint was heavily affected by lead poisoning. One massive dose and medium doses over a lifetime may manifest differently. You are breathing in vaporized engine oil, you think that's OK?
