Not that it takes a lot of time to do, but I am considering no longer keeping track of PF time, and wondering if a potential future employer would care that I was logging only SIC time, since PF time means nothing towards 121 PIC totals, anyway.

So it doesn't matter in the 121 world, but in the 91/135 world, wouldn't they care how much TPIC you have? I guess it would only matter for people who were thinking of flying past age 65.....and might not have 10,000 hrs when they get there.
