I wouldn't fret too much about IAH vs. two leg commutes. You are going to have a good opportunity to try commuting to a junior base (probably EWR, maybe IAD). Maybe you'll be able to bid a line there and see how you like it before you get to IAH. If you bid into IAH and don't like reserve again... it should be pretty easy/quick to bid back to EWR.
You'll want to get proficient at the Game of Reserves, namely Aggressively picking up trips with late departures or >1700hrs Short Calls/Field Standbys on Day 1. Doing this well would allow you to commute in on Day 1. Then, going into your last day of reserve you'll want to manage your position in the Reserve Silo so that you get released as early as possible right at 1000 and can thus get home on your last day (you do this by getting released from a trip/SC/FSB as late as possible on the next to last day of your reserve block... which will normally keep you from getting an assignment on your last day which would keep you in base after 1000 hours).
Just hope you don't get 756 out of indoc, or you are going to be stuck with that two legger for probably two or more years. If you haven't already, if loads are favorable consider driving a couple of hours to someplace like PNS which has direct service to EWR. I wouldn't blame you one bit if you took an offer at DAL... or regularly buy tickets.
