Two questions:
1) Let’s say someone is awarded a new aircraft on this Sept AE, with training in February. Then they subsequently get awarded a new category on the Nov/Dec AE (assuming there’s a new category) with training in Mar/April. I assume they wouldn’t go to the first training? Is the previous award automatically cancelled?
2) the September AE is 210 days. Does this mean that training could begin anytime between Oct and Apr (7 months), or that conversion must occur in that time (in other words I’m wondering how late training could possibly start).

Don't assume anything when it comes to skipping training because it seems nonsensical in the bigger picture. It could happen, but you could also go to training for two aircraft in the span of a few months. History is filled with silliness - ask some older folks you fly with and almost everyone has a story.
If there's not an easy solution to pulling you from training and putting someone else in that seat, the company could find your training preferable to paying/burning seat fillers...you'd do just fine in that role.
