Pilot pay always used to be the largest single expense historically, but fuel surpassed that at some point after the turn of the century. Although pilot pay may be catching up at some airlines.

Inflation-adjusted pilot pay is not that high by historical standards. Oil (inflation adjusted) took a big jump in the 1970's and, on average, never came back down.
