I would say I am a solid instrument pilot (I teach instrument students daily) but I am just missing the Instrument time.
Would you mind explaining that “warm-up-as-an-FO-til-you’re-comfortable” program you have mentioned? I am guessing that is what people are referring to as DEC?

When you say you're a "solid instrument pilot," how much experience do you have in 200VV RVR1800, etc. Hard IFR and not just teaching it. Reason I'm saying this is not to be rude. Rather get a better understanding of your experiences. As PIC, as you know, you're responsible of course and most likely will be sitting with a new green FO straight out of IOE and that will drive it home. When I first upgraded, it drove it home for me. With 90% of your flying in the spring and summer in the vortex, you will shoot routinely to 200VV PSM MVY/ACK without question. Its not a big deal once you do it again and again, but it is different. You must be on top of your game. Throw all of that with a new plane, complex avionics and a lot of "comfortability" flies right out of the window. Compile that with the operation to learn it can be overwhelming depending on how you organize your time and run your ship.
