No different then the 321 will be. And no not every boeing is going .81. The 757 is filed for .78 all the time and if you go .81 you won't be making it back all that often depending on where u come out of. Many times the 767 is filled for less then .80 as well.
There's rumors that they will be adding tracks or designating tracks for slow aircraft like the airbus and 737.

I have not taken a 757 to Europe, but I have taken one DEN-KOA, DEN-OGG and DEN-LIH. We did our crossing at .80-.81 for those flights. I just assumed that Europe would be similar. I understand that the winds along the NATs can be crazier than in the Pacific.
