For what it's worth, the 5 I'm currently mentoring have fairly extensive aviation backgrounds and seem to be very sharp. Having never flown with them I cannot attest to their stick and rudder, but I have encouraged all of them to explore fun flying outside of work such as glider, taildragger or aerobatic flying - there is no replacement for building that seat-of-the-pants kinesthetic sense short of basic military pilot training.
Is the Aviate program viable for someone without flight experience. Their website offers a private pilot license for no experience candidates, then further ratings in the Aviate program. Is this possible?
