In this specific case I am not sure that I would say that your suggestion would actually acheive better QOL. By doing what he did, this pilot will go through just one Transition Course and be able to do some WB flying for the last two years of his career. In your suggestion he would have to take a second transition course in order to get any WB flying. And if he really wants to do the WB flying, waiting to take a bid later could mean never getting sent to school and missing out on that WB flying entirely.
That being said, I think this is a very edge case of where I could see taking the 777/787 straight out of training be understandable.
