I don't think there is any benefit to looking at the attitude indicator for visual flight. The only exception is establishing the picture for bank angle on steep turns. Even then that is only a brief reference to start mostly. If you don't know what they want you to look at I'd ask.
You can use any checklist as long as it hits the elements needed in the POH, but there should be only one version of the checklist used for the aircraft type or it would be extremely confusing. When you say "printed out online" I'm assuming it's the school website and not a random copy of a checklist for that airplane, or that everyone at the school uses that version.
