The pros and cons of both places have been discussed pretty extensively. While the pay and retirement is probably better at UPS one of the random drawbacks at UPS is you have less options. At United you can choose to bid larger equipment for pay or you can choose to stay and get senior pretty quickly on a narrow body. There are also way more bases and equipment types at United. At UPS since it is pay to seniority there is a lot less movement, mostly just do to retirements and expansion. Basically at United you can choose to bid for pay or you can choose to bid for seniority. At UPS your seniority progression will just naturally happen but your pay will be good while you wait.
The seniority progression at UPS usually comes from the many early retirees. Some folks also decide our FO rates are good enough for their lifestyle and enjoy the senior schedules. One of the best options is Z flying. U can choose to fly round the world trips or strictly Hawaii or week on/week off domestic flying all without changing aircraft or domiciles. Lots of variety, altho many find their niche early on and stick with it.
