Just shave before you shower or dress, and keep a sponge or something to wipe down the countertop and sink. On the road, I rinse the sink but don't worry about every last little hair since hotel housekeeping has the supplies to thoroughly clean the sink/countertop very quickly so it's not like it's leaving housekeeping an exceptionally rude mess to deal with.
