1) scribble the release sig & ask FO if I can scribble for him (or he can scribble on my iPad)
2) other documents; open older flight plan format
3) open inflight tracking once airborne
In reference to point 2, I believe that is going away is only there in the interim to help in a pinch if you can't find what you're looking for..
