To be fair to the overzealous FOs it's the Captain that calls for engine start. And they usually call for it as soon as we start moving. I'm too lazy to care enough to challenge them on waiting a bit. And was there ever a policy to not clear off the pushback crew until at least one engine is up and running? Most Captains still tell them we got one good motor in the sendoff, as if they're paying that much attention.
