because you totally shut down airports for no reason when there are thunderstorms dozens of miles from the actual airport, don't allow aircraft to takeoff towards airports that are shutdown due to weather even though the aircraft wont be there for hours, are completely unable to come up with new routes that simply go around the storm because it doesn't go through the arrival corridor, and when you do come up with a new route it takes you a hundred miles out of the way for no reason, or even better it took you so long to come up with a new route by the time you start giving it to people the weather moved to exactly where the new route is, or departure/approach is so overwhelmed with weather deviations they limit the amount of arrivals and departures so perhaps having better staffing would solve that problem so the tracons aren't so overloaded, and maybe if the weather is so bad we limit military airspace so more airspace is available to avoid weather
