Nah, I think in this case most of us "younguns" value our hearing and will act accordingly. I haven't met a single Gen X or younger pilot who didn't use a high quality noise cancelling headset.
My 35 year old FO on my last two trips used the Telex 750's supplied by the company. Meanwhile 59 year old me wears a Bose Proflight headset. He said at his previous gig - Spirit - pretty much everyone wore company headsets, so he was fine with them.
So, while you may not have met any, there are definitely at least a few Gen X or younger pilots who don't wear noise cancelling headsets (personally, I don't understand it, but not my call...)
