For my own edification, do you have a reference for that?

For context in this scenario:

Individual in question is a New Hire Pilot at UAL
Submitted resignation to previous employer one week prior to the start of Indoc (thus employment overlap of one week)
No scheduled work activities for previous employer
No pay being earned at previous job
Not in a management position
Hasn’t accepted any new employment

If the expectation is that you no longer be on the seniority list of your previous employer, else you risk termination, that information should be clearly communicated and emphasized to all new hires, and to my knowledge it is not, unless that’s changed.

Additionally, if simply being on that seniority list, with no associated work activity, is grounds for termination - that seems rather counter productive for the company.
Whether you’d get fired for it is debatable, but it is prohibited to be employed by another airline without approval from the company first. It’s in the CBA and United’s conflict of interest policy. Not knowing the rules generally isn’t an excuse for violating them, though.
