Is this a serious thing? Would United really look twice at a guy with a 2 year degree, no 121 time, and a type rating?

skipping the regionals...........which is essentially what the OP is asking to do.........is a thing .......but not at the legacies it ain't....at least not yet.

I personally know of at least 2 people who have pulled off the "skip the regionals" trick play, but it was at Frontier and both individuals had very impressive "outside of flying stuff" resumé
In short go to a regional, or Frontier and learn to play ball. Clearly you've done well with the CFII Flight school administration thing....just show United you can handle the next step.
Speaking for myself I'm always impressed at those who've flown/trained/ worked their way up and usually am not as impressed with those whose tried to cut in line, or have always looked for some loophole to exploit.
