I too live in a rural area, just finally got fed up with the local DSL and the speed at which they're putting fiber in thru the county. Broke down and bought Starlink. Best decision I've made in a while, blows the DSL out of the water. I don't have latency issues at all with Starlink, even when I'm gaming. Typically I see ping numbers in the mid to low 30ms. The biggest issue with Starlink is, the more people who have it in a local area, the slower it's going to be.
