Each airline has their own way of handling loss of original records. Your best bet is to ask the recruiters directly when you’re offered an interview. At least for AA, you can write a notarized letter stating you lost ARMS records during that period but you kept a digital log and your FHR contains that time. An MFR from HARM stating they can’t access them probably wouldn’t hurt either.

If you used GTIMS or PEX during that time, see if you can get some kind of report. Unfortunately, after AAMS shut down last year, there’s no way to get the individual flights off ARMS beyond 18 months ago.
