While there may be some exceptions, most small cargo operators are under part 135....which requires 1200 hours to be PIC. You could theoretically get hired as a co-pilot with less than 1200, but most night freight pilots start in a single-engine, single-pilot airplane...which requires the 1200 hours.

Keep looking for non-cfi time-building opportunities if you like, but you had probably best assume that you will need to CFI for 1200+ TT and 100+ ME before you will be able to get a job doing anything else.
