Recency and currency only count for the day you interview. In my case, I was stuck in a desk job for my last two years in the military. SWA was kind enough to interview me a full year before my date of availability while I still (just barely) held the recency minimums. If you have been offered a job and are in the pool, I think you are OK if you are not currently flying. When I showed up for training, it had been almost 2 years since I last flew.
