LIIMITED winter stuff. You don't want all that stuff filling up your airplane.
I dunno, I guess I was at Landcare a year before you, but when I was there, I was assigned upstate NY from the beginning of the season all the way to mid January. It was frequently in the teens or twenties with gusty winds. I saw other guys shivering while taking their covers off and fueling their planes, and was so glad I had a down jacket! of course the gloves were a must-have too while screwing/unscrewing all those covers. eventually i got lazy and started putting in just 2 screws.
but yeah, as far as winter gear goes... I guess it all depends on where you get assigned. I certainly didnt choose upstate NY in the winter, but that's where they sent me!
