It is my understanding that FedEx allows their employee's to list 7 days prior to the flight. 24hrs before the flight, anyone else can call and get listed to create a reservation. 2hrs before departure is the cut-off time.

Of course once you get onboard it is still Captain's decision. Cookies are not required but recommended.

I've used FedEx once. Great experience. No TSA screening or schedule or worrying if you get on or not. Had another FedEx guy riding in the back with me. He brought a sleeping bag and air mattress for the floor, I got to sleep on the row of seats on the bulkhead. Good luck if transiting through MEM as FedEx is HUGE!!! I think we rode the bus around for about 30 minutes and it all looked the same.

Just FYI, the A300 I was on had 5 or 6 seats on the bulkhead plus the ones up front so unless there are alot of FedEx employee's jumpseating, you should be fine.
