It's not a commercial op, it's a private airplane used for the personal business, family and angel flights. And yes, they don't need the flight time. They did mention insurance too, I guess that's why it helps them to have a copilot.
In that case they might be OK with you logging PIC (make sure the other pilot does not). That would be 100% legal (but insurance might be an issue).
Like someone said, you had better know the systems and specs at an interview...especially if that is the most advanced airplane in your logbook.
