Default How to say this in a few sentences

A potential employer has requested an updated resume. Do I need to include a cover letter? My previous resume had a cover letter which I sent to them in May of this year.

If so, I need some way to say the following. We spoke (the chief pilot and I) earlier in may and I expressed my interest as a flight instructor. I told her I was not applying to build hours and then head for the airlines, but to teach and develop myself as a flight instructor. Basically my goals with the school were long term with my sights set on, in many years time, as a check airman and/or team leader (part 141 school). She seemed very impressed by this and said those were qualities she was looking for.

Any professional way of wording this in 1 or 2 sentences to be included with a cover letter?
