Most aviation writers are also CFIs so I am not sure exactly what you after. Tips on teaching? Anec dotes? Technical explanations? Lesson plans? How to get a job? There are lots of books out there on flight training and its many subtopics. Maybe you could be a little more specific. The best reference material on how to teach is the FOI. If you want something more specific, you need to specify whether you are doing primary training, instrument training, multiengine, etc. and what kinds of questions you have about it.
