The best thing you could do is get some sim time (or PCATD). Go get brushed up on IFR procedures, full procedure approaches,and unpublished holds. If you are up to speed on those items it will not matter how long it has been since you have been in the air. Good Luck, let us know how it goes.
Thanks for the post, like I said I feel confident about the actual flying. My main concern is "convincing" the interviewer.
