They could easily adapt one of the many systems already in place in military aircraft. I have cameras in my cockpits to record my displays. Those cameras could easily be moved to film the entire cockpit. I agree with the testing and the such and such - but if they wanted it bad enough then it could be done quickly. One thing to ask yourself though - what are you doing in the cockpit that you are afraid of people seeing? This same argument was use I'm sure when people first started talking about CVRS and FDRs.
