Find a cargo outfit that with some kind of twin. Make friends with the PIC and beg to sit right seat. Log the time you actually fly (If you win the PICs trust, you will fly most of the time). This setup is more legit if the PIC is a multi-instructor or if you are a MEI.

Some will have a problem with the legality of the situation. Let them worry about themselves. As long as you are genuinely learning and gaining experience I think you can log it.
