They give you an application supplement to include your times since the airlineapps application. I would, however, make a notation in your logbook to point out the spot in your logbook when you filled out the airlineapps application. I interviewed last week, and had some more flight instruction and sim time since I applied, and I was not even asked about my logbook. Just makes sure your times add up correctly and you have checkrides tabbed. In short, absolutely go flying to keep yourself current!
As far as your earlier question: I was not asked this, but to the best of my knowledge the answer would be when you make the initial decision to go to an alternate. You base the decision on the weather and likelihood of getting in since the regs require that you only carry enough fuel to get to your intended destination and then the
furthest alternate and thereafter for 45 mins. As you can imagine, that may not leave you enough fuel to go to both alternates
