Thomas Edison State College has a fantastic aviation degree program. They are fully accredited and have an excellent online program that is great. They give you a lot of credits for FAA certification. If you have an ATP with a type, and a current CFI you will have almost half the credits needed for a bachelors degree. In most cases you would need the first and second year courses and a few electives. Not a bad way to go.
