For the GI Bill, in order to get the whole thing, you need to have a certain amount of active duty time. From what I understand the time is going to change sometime this year to include active duty NG time, but it's something you should probably research.

Some states will let you go right to flight school at enlistment (well, WOC or OCS, then flight). I know PA is like this. AZ makes you wait a year. Others do their own thing. I personally recommend waiting at LEAST a year after enlisting before going, simply so that you can kinda/sorta figure out how the military works before jumping into a commissioned position.
I was originally going to go to WOCS, then flight school, but it turns out I love my enlisted job (15Q), and am probably not going to renew my contract, since the wife doesn't want me to deploy again, haha.
