Job Hopping before airlines to build hours
Do the airlines look down upon job-hopping while building hours? I've taken a few different jobs in the past year to build 1,100 hours in total and I may be finding myself on my 4th job to get me to my 1,500 hours.
My first CFI gig (7 months) I was flying 90-100 hours/month but moved home due to my wife and I expecting our first child, my second CFI gig I took early-November-mid-December; I'll chalk that one up to the school over-promising hours/students and bad weather (flew 43 hours in 2 months). I left that job for a survey pilot position where I was promised a 10-12 day ON and 3-4 OFF schedule. I completed my first project (18 days ON, flying 56 hours) and now don't have another project planned until end of February. I understand that surveying work is last minute type stuff but I can't sit around for a month waiting to fly; I'm not wired that way.
At this point my goal is the airlines and to get there the quickest I can, now with the little one on the way. In the past week a new opportunity has presented itself at a busy, local flight school that would allow me to get to my 1500 hours by probably my April/May.
I'm thinking about taking this position to accelerate my start date at an airline. In my case all "job hopping" that has been done, has been done for family reasons or to find a job that can keep up with my work ethic .
Thoughts?

Probably no issue, it's common enough in entry-level GA.
With more than a couple jobs, I'd probably have a good explanation for each move if asked (sounds like you do). There might be a vague suspicion that you might have some sort of attitude/personality issue, make sure you defuse that. Just be careful blaming the employer... state the facts that the flying opportunity didn't develop as you had hoped and leave it at that.
