The best you can hope for IMHO is that you keep your trap shut about it to everyone you know forever and you may get through this with a job. 10 years ago it may not come up. 10 years ago you most likely did not do time for it. This is probably the best advice. If you mention it now, you are GONE.
You are in potentially serious career jeopardy here...if you get fired from a 121 carrier for lying on your app, will most likely NEVER get a 121 job again.
I hate to say it, but the safest course for you is pretty drastic: You need to get a different 121 job before they find out about it (if possible).
If you quit before they find out, no harm/no foul. Just be honest with your new employer, two ancient history DUI's should not preclude you from a regional I would think.
The one thing you have going for is that the one DUI was long ago, and it's remotely possible the FBI database might not be complete that far back. But I suspect a ten year old DUI would show up...they were using computers back in the 90's.
Edit: Since you haven't started class yet, you can simply call them up and say something came up and politely decline the class date. I know this will be a tough pill to swallow, but as long as you don't start class they cannot fire you. Airlines, especially regionals, will often not spend the time and money on the background check until AFTER you start class, since the check does not need to be completed until you actually fly IOE. This means that you will be 1-3 weeks into ground school when they find out and fire you.
You might aso attempt to find out if the regional in question completes their background checks prior to class date...if they do this, then you would have less chance of being found out after you start.

You know if it was me, risking my whole career because of lying about a DUI wouldnt be worth it, maybe just resign now and try somewhere else and disclose it there. I'm sure you can get on somewhere else. Good luck.
