Of course, pilots being pilots were always wondering if it was a test. You know,"always be professional and don't take your jacket off no matter what" and/or would it be seen as bad to NOT take your jacket off, etc.

I bought a men's warehouse suit for regional interviews in 2006, it worked great. I'm getting married and bought a Hugo Boss suit for the wedding and will wear that for major interviews when that happens.

Blue seersucker, maroon ruffled shirt with French cuffs, white bucks, and a bolo tie. Walking stick is optional. 
Seriously, though, the Mens Warehouse and Jos A Banks products look great for a short period of time, but they don't hold up as well as better quality suits. If you can afford a Zanella suit you should buy one: you can wear one on the flight for three hours and it won't pick up a single wrinkle. Try that in a MW or JAB suit: you'll look like you slept in it. And you can wear the Zanella suit to ten interviews and it will still look perfect, while the MW or JAB suit will need a pressing ($) after each one.
In the long run you'll save money with a good suit, and you don't have to buy a Zanella. If the pants fabric is "Super 100" or "Super 110" you're looking at the right thing. Those are the mark of better quality fabrics that don't show wrinkles and have the right drape to make you look great.
You can can get Zanella pants and suits at Nordstrom and some men's shops. Nordstrom also carries a terrific line of wrinkle-free shirts. They cost about $50, and are worth every penny, because, like the Zanellas, they hardly shows wrinkles. You can go through a whole day of interviews and you'll still look crisp and sharp. Your can't go wrong with a white shirt, and light blue is OK, too.
A simple black belt with a brushed nickel or stainless is the right way to go. The shoes should be black lace ups (loafers are OK, too) and should be polished, clean, and should not show a lot of wear. Socks should coordinate with your suit; either dark blue for blue suites or black for dark grey or black suits. Your tie needs to be clean and not overly vibrant. Avoid polyester ties, and definitely don't use a clip on. No tie tack or tie bar.
Remember, your aim is to look squared away and under-stated.

There was a thread sometime ago asking about a little individual flair in the suit during the interview.
The very general consensus was CONSERVATIVE!
I guess there is time for flair later on (flag tie or one with reindeers on it) after probation.

Sure do - they wear summer-weight suits. Remember, the interview typically is being done in an air conditioned office, not on the ramp or in the hangar.
