You could but that's not exactly an abundant source of flight time. Honestly, if I was career changing to be an airline pilot, I'd just go all in through ALLATPs and do their program. Interview and get hired at an airline conditionally, get all your certificates, CFI at ALLATPs until ATP, and then go straight to the regional (Republic Airlines).

You do realize THOSE days are long gone, right? Ha I remember in Summer 2003 a Cherokee 140 at $55/hr and the instructor $20/hr. $75/hr easy coin! Today, the pipeline is not the same as it was 10 years ago and flying is super expensive with airplanes going from $90-$200+/hr and instructors from 40-100/hr+.
CFIing to build hours at a major flight school like ERAU or UND, sure there might be enough students to get time quick. CFIing at a mom/pop airport FBO in the outskirts of Houston to build time? Good luck.
